almost candied yams

Ingredients

1/2 cup butter

3/4 teaspoon sea salt

1 teaspoon vanilla

1/2 cup brown sugar

1 teaspoon cinnamon

1/4 teaspoon allspice

1/4 teaspoon ground ginger

3 pounds sweet potatoes, peeled and chopped into 1/2 inch chunks

Instructions

  1. Preheat oven to 400 F.

  2. Add all ingredients except for sweet potatoes to a small saucepan. Cook at medium heat, stirring occasionally. Simmer for five minutes and then remove from heat.

  3. Thoroughly butter a 9x13 inch glass baking dish.

  4. Evenly layer sweet potatoes in baking dish.

  5. Pour butter mixture over sweet potatoes and mix until all sweet potato chunks are covered.

  6. Cover baking dish with aluminum foil and bake for 20 minutes.

  7. Remove baking dish from oven, stir potatoes, replace foil, and put back in oven for another 20 minutes.

  8. Remove baking dish from oven and stir potatoes again. Put back in oven without foil and bake for five minutes.

  9. Allow to cool for ten minutes before serving.


About this recipe

I came up with this recipe as an alternative to candied yams. I like candied yams, but I can only eat a few bites before I'm overwhelmed by how sweet they are. (Iā€™d personally prefer my sugar in the form of cake and ice cream.) This dish has a warm spice flavor, a touch of caramelized sweetness, and the sweet potatoes are so tender they practically melt in your mouth.
