Move aside sweet potato imposter, we're here to talk about African yams. This is the yam I grew up eating, and it is my favorite starchy tuber. (Lucky for me, yams are a great source of fiber and several vitamins and minerals!) You can find yams at an international supermarket or West African grocery store.

Tip: always wear gloves when cutting yam to avoid itchy skin!

Use a knife to peel the skin. Yam skin is papery and should be easy to remove
