Move aside sweet potato imposter, we're here to talk about African yams. This is the yam I grew up eating, and it is my favorite starchy tuber. (Lucky for me, yams are a great source of fiber and several vitamins and minerals!) You can find yams at an international supermarket or West African grocery store.
Tip: always wear gloves when cutting yam to avoid itchy skin!
Slice yam crosswise into slices about 1 inch thick.
Use a knife to peel the skin. Yam skin is papery and should be easy to remove
Cut each slice into 6-9 pieces, about 1 x 1 inch in size.
Rinse until water runs mostly clear. Drain water.
Place in pot with 1 tsp salt and enough water to cover yam.
Bring to a boil.
Boil for about 10 minutes, until yam is soft enough to easily pierce with a fork.
Drain and serve.
