cardamom brown sugar cookies

Ingredients

113 grams (1/2 cup) unsalted butter (use European-style butter if possible!)

200 grams (1 cup) light brown sugar

1/2 teaspoon sea salt

1/2 teaspoon cardamom

1 tablespoon vanilla extract

3 large egg yolks

3/4 teaspoon baking soda

210 grams (1 3/4 cups) all-purpose flour

Instructions

  1. Preheat oven to 350 F

  2. In a large mixing bowl, cream the butter and brown sugar until it is light and fluffy.

  3. Add salt, vanilla, and cardamom and mix to combine.

  4. Add egg yolks and beat to combine.

  5. Add baking soda and mix to combine.

  6. Add flour. Mix until the flour is just incorporated into the dough.

  7. Put dough in fridge and chill for at least 20 minutes (optional)

  8. Scoop cookie dough into balls about 1 inch in diameter, and place on baking sheet.

  9. Bake for 10 minutes, until the edges are well set and just starting to brown. The center of the cookies will still look slightly doughy. Allow to cool on the baking sheet for 10 minutes (the cookies will continue to cook on the hot pan).

It’s almost Christmas, and Christmas means cookies with lots of sugar and spice! It also means lots of hard, crunchy cookies. I have something to tell you: I am not here for hard cookies. The other day I thought to myself, why can't all cookies be as soft and chewy as my favorite chocolate chip cookies? [Drumroll please!] Fellow soft cookie lovers rejoice! I am delighted to introduce you to a festive holiday cookie that has the perfect chewy texture and plenty of spice. These cookies also are just barely crunchy while still being soft (how I accomplished that, I honestly don't know).

Perfect texture isn't the only reason I love these cookies. They include my favorite baking spice: cardamom. Step aside cinnamon! We are here to enjoy the spicy sweet magic of cardamom. [All hail Queen Cardamom!]
