lazy chickpea tomato soup

Ingredients

1 tablespoon olive oil

2 cloves garlic, minced

A shake (about 1/8 teaspoon) of the following spices, or whatever looks good in your pantry:

  • Salt

  • Black pepper

  • Dried thyme

  • Dried basil

  • Turmeric

  • Onion powder

  • Red pepper flakes

1 can (15-ish ounces) chickpeas, drained and rinsed

1/2 cup water

1 can (15-ish ounces) tomato soup

Instructions

  1. Heat olive oil in a small saucepan on medium high heat.

  2. Once oil is hot, add spices and stir until fragrant, about 30 seconds.

  3. Add garlic and cook until golden brown, about one minute.

  4. Add chickpeas. Stir and cook for another 30 seconds.

  5. Add water. Cover and simmer for 10 minutes. If you'd like, crush up to one quarter of the chickpeas with the back of a spoon.

  6. Add tomato soup and stir.

  7. Cover and simmer for 5 minutes

  8. Serve hot, with a hearty slice of toasted bread.

If you don't have the time or energy to do more than dump a can of soup into a bowl and stick that bowl in the microwave, that's ok! I've totally been there. But if you feel up to turning on the stove, I recommend following this recipe. The results of this thrown-together concoction are so shockingly good, I don't honestly know if I'd ever bother making this from scratch. I hope you enjoy!
