coffee chocolate chip banana bread

Ingredients

About 1.5 cups mashed banana from 3 overripe bananas (the browner the better)

1/4 cup plain yogurt

2 eggs

3 tablespoons melted butter

3 tablespoons vegetable oil

1 teaspoon vanilla extract

1/2 cup light brown sugar

1/4 cup white sugar

3/4 teaspoon baking soda

1/2 teaspoon salt

2 tablespoons cold brew concentrate or espresso

2 cups flour

1 cup semisweet chocolate chips (or, y'know, a whole bag)

Instructions

  1. Preheat the oven to 350°F. Generously grease a 9x5 inch loaf pan.

  2. Mash bananas in large bowl.

  3. Add yogurt, eggs, butter, oil, and vanilla and beat together.

  4. Add sugars, baking soda, salt, and coffee and mix thoroughly. Give it an extra 5 stirs just to be sure really properly mixed.

  5. Add flour and mix until just combined.

  6. Fold in chocolate chips.

  7. Pour batter into the prepared pan.

  8. Bake until top is golden brown and a toothpick inserted into the center comes out clean, about 55 minutes. Allow to cool before serving.

There isn't enough coffee in this recipe for this to to keep you up at night, unless you're busy dreaming about having a giant slice for breakfast. The coffee in here is very subtle and mostly adds some extra depth to the bread’s flavor. And not only does this recipe taste good — it also can be made in one mixing bowl! Fewer dishes is a win for everyone.
