dulce de leche ice cream

Ingredients

dulce de leche

4 cups whole lactose free milk (or regular whole milk)

1 1/4 cups sugar

1/4 tsp baking soda

1 teaspoon vanilla

ice cream

3 cups lactose free half and half (or 1.5 cups whole milk + 1.5 cups heavy cream)

1 cup dulce de leche

1/4 teaspoon salt

1/2 teaspoon vanilla

6 egg yolks, beaten

2 tablespoons vodka (optional)

Instructions

  1. Add all ingredients to a saucepan and bring to a boil.

  2. Reduce heat to a simmer and cook uncovered, stirring more frequently as the milk thickens. The dulce de leche is ready when the milk has thickened and caramelized and has reduced to about 1 cup.

make ice cream

  1. Prepare an ice bath by filling a large bowl with ice and water. Place a medium mixing bowl fitted with a fine mesh strainer inside the ice bath.

  2. In a small saucepan, add half and half, 2/3 cup dulce de leche, salt, and egg yolks. Cook at medium low heat, stirring constantly, until mixture is thick enough to coat the back of a wooden spoon (about 170 F on an instant read thermometer). Do not allow custard to boil!

  3. Remove custard from heat and immediately pour through fine mesh strainer into the bowl over the ice bath.

  4. Add vanilla and vodka to custard and stir.

  5. Allow custard to cool to room temperature, stirring occasionally.

  6. Cover with a layer of plastic wrap pressed directly over the surface of your custard. Place custard in refrigerator and chill until cold (I leave mine overnight).

  7. Make ice cream according to ice cream machine instructions. In last 7 minutes of ice cream churning, add remaining dulce de leche through top of ice cream maker to create a dulce de leche swirl.

  8. Serve immediately as soft serve ice cream. For a firmer consistency, freeze for a few hours before serving.

All of the ice cream recipes on my website are lactose free, and this is no exception! Making dulce de leche from scratch means I can enjoy as much of this delectable ice cream as I’d like. When I tell you I almost cried when I tried this, I am not exaggerating. It is that good.

It takes quite a bit of time to make dulce de leche from scratch, so feel free to buy dulce de leche from the store instead (or make it the lazy way, using a can of sweetened condensed milk). I’m sure it’ll be just as delicious!
