honey fig cake
Ingredients
1/4 cup melted butter
1/4 cup orange juice
1/4 cup milk
1/2 tsp orange zest
1/4 cup honey
4 eggs
1 teaspoon vanilla extract
1/2 teaspoon salt
1/4 teaspoon ground cardamom
1 teaspoon baking powder
1 1/2 cup flour
3/4 cup almond flour
About 15 ripe figs destemmed and sliced in half
2 tablespoons sugar
Instructions
Preheat oven to 375 F.
In a large bowl, whisk together butter, orange juice, orange zest, milk, honey, eggs, and vanilla.
Sprinkle baking powder, cardamom and salt onto mixture. Mix thoroughly.
Add almond flour and mix thoroughly.
Add flour and mix until just combined.
Pour batter into buttered cast iron skillet.
Arrange fig halves cut-side up over the batter.
Sprinkle top of figs and batter with sugar
Bake for 30 minutes, until the cake is golden and a toothpick inserted into center comes out clean.
About this recipe
I always get really excited when it’s fig season. This year I made this delicious cake (adapted from Waves in the Kitchen). Like all of my cakes, it isn’t too sweet and is packed with flavor. The almond flour helps the cake stay moist without being too dense.
The worst part of this recipe is that figs aren’t available year round! I haven’t tried making this cake with dried figs, but let me know if you experiment. It’s too good to wait until next fig season.
